Making cottage cheese is very easy!
To prepare cottage cheese, use the VIVO cottage cheese starter and milk (cow, goat, etc.). 1 liter of milk is sufficient to make 250 grams of cottage cheese. 1 sachet of starter is enough to ferment up to 3 liters of milk.
Prepare a fermented milk base for the cheese using VIVO starter. The preparation is the same as for VIVO yogurt.
The fermented milk base should then be heated over low heat for about 40 minutes; if using an electric stove, use the minimum power. Do not boil! As a result, ricotta-like curds should form in the milk.
Remove the pot from heat and allow the milk to cool. Strain the product through a cloth and let it drip to separate the whey from the cottage cheese.
In the refrigerator (6°C ±2°C) for 12 months.
